Author : Aarthi      Blog :YUMMY TUMMY      Date: 7/23/2012 6:59:00 AM

Cooking is fun, but the prepping part is definitely not fun..Especially when you have got no time on hand, in the peek morning hours. Think about this, if you got all the vegetables already cut, cooked and kept ready in the freezer how you will feel…That’s what I am trying to post for you…The one thing is you should find some time for you to do all these work. Then you can cook in breeze always..

Carrots and Beans are the most important things which you need either if you make korma, or any pulav or any dish..I mostly buy them in bulk, later I found that most of the veggies get spoiled when they sit in the fridge for weeks..So I started to freeze them and now this is working for me like anything..I am loving my freezed veggies..You can freeze cauliflower, peas, corn like this..

I use these to make pulav, briyani, korma, upmas, soup or even in noodles….I hope you will love my idea and please share your freezing idea..

Ingrediants:

Carrot - 1 kg
Beans - 1 kg

Other Stuffs:
Large Stock pot
Slotted Spoon
Colander
Baking Tray
Freezer Bags
Chopping Board
Knife
Peeler

Method:

FOR CARROTS:

Take water in a large pot and bring it up to a boil. In another pot take water and ice cubes.

Peel Carrot and cut off the ends of it. Chop them into bite size pieces or the size which you want it to be.

Now drop the carrot in the water and cook them for 5 mins.

Now using a slotted spoon remove them from the water and immediately immerse them in ice cold water.

Drain them in a colander till they are completely dry.

Transfer them to a baking tray and freeze them for 4-5 hours..

Once they are frozen collect them in a freezer bag..Label them and freeze.

FOR BEANS.

Cut the top and bottom of the beans and cut them into small pieces or in the size which you prefer.

Now drop the beans in the water and cook them for 5 mins.

Notes:

1.Make sure that you freeze them first in a baking tray or any plate, this will make the carrot freeze individually and they won't clump up in the freezer.

2.Label the bags properly. This will give a clear idea of the time frame when it is frozen.

3.You can cut the vegetables as per your liking.

4.This can be frozen for upto 6 months.

5.Cooking them first and immersing them in ice cold water make the vegetables stay crunchy and helps it to retain its colour.
