Cauli Flower Curry

Bismillahir Rahmanir Raheem

Some vegetables when cooked, must remain remain crunchy. Cauliflower is one of those vegetables that tends to cook very fast and get mushy quickly. One way to keep it cooked just right is, to cook without the lid. I cook the cauliflower in more than one way and this is just the way Mom makes:)

Ingredients:

Cauliflower-1, cut into small florets and washed
Oil-as needed
Tur daal-1/4 cup soaked
Onion-1/2
Salt- to taste
Turmeric powder-1/2 tsp
Water-1/4 cup
Cilantro- to garnish

to be ground...

Green chillies-3-4
Garlic-2 cloves
Fresh coconut-2 tbs
Cumin seeds-1 tsp

Directions:

1.Heat oil in a pot and add onions and saute until they turn translucent.

2. Put in  the ground mixture and fry for a brief minute.

3. Add the soaked daal along with salt, turmeric powder, and the florets.

4.Cook until the daal is soft but still in shape.

5. Take a bite and see if the florets are cooked enough and the water is all absorbed and it turns into a flovorful dry curry.

6. Turn off the stove and transfer to a serving bowl.

7. Enjoy!
