Badami Vegetable Kurma(Korma) / Veggies cooked in a Rich Almond Sauce

I made cilantro chapati last night and it cameout so flavourful. I will post the recipe soon. When I was thinking to make a curry to go with it. I remembered the chopped carrot and beans which I kept frozen couple of weeks ago and also the almonds which were lying in the fridge. I thought of making something with that, then came to a conclusion of making a vegetable curry with almonds..I also throwed one potato which I cubed along with a hanful of peas in it..It came out so good and hubby loved it a lot.


This curry is so easy to make. I made it from start to finish in less than 30 mins. You can add cashews in place of almonds, but I think almonds is little healthier than cashews. You can use any vegetables as you like..This can be served with roti, rice or appam..



 I hope you will love it and tell me if you tried it..

Ingrediants:

Mixed Vegetables ( I used Carrot,Beans, Peas, Potatoes ) - 2 cups
Coriander leaves / Cilantro - for garnishing

For Masala:
Oil- 2 tblspn
Fennel Seeds / Sombu / Saunf -1 tblspn
Cinnamon / Pattai - 1 small stick
Onion- 1 chopped
Ginger Garlic Paste - 1 tblspn
Almonds / Badam - 10
Chilli powder - 1 tsp
Garam masala powder - 1tsp
Salt to taste
Sugar - 1 tsp
Tomato- 2 chopped

Method:

Heat oil in  a pan. Add fennel and cinnamon in that and saute for 30 sec.

Add in onions and saute for a min. Add almonds and mix well.

Add in salt, sugar, chilli powder and garam masala powder and mix well.

Throw in tomatoes and cook till they turn mushy.

Now allow this to cool down. Transfer this to a blender and make into a fine puree by adding some water. Set this aside.

Take all your veggies in the same pot and cover with water. Bring everything to a boil and simmer till they are cooked.

Now add in the ground masala and mix well. Bring it to a boil again and cover the pan. Simmer the flame and cook till oil separates on top.

Switch off the flame and throw in cilantro.

Mix well and serve with some roti, chapati or anything.

Take all your ingrediants
Start by frying fennel, cinnamon in oil
add onions
and almonds
add in the spice powders
and some tomatoes
add some ginger garlic paste
and cook till tomatoes are mushy
transfer this to a blender
and make into a fine puree

Take your veggies in the same pan
cover it with water
cover the pan and cook
add the ground masala in this
and mix well
cover and cook
till oil separates on top
throw in some cilantro
Done Done
Spoon into a bowl
Serve with Roti..
