Rava/sooji/ Rotti

Rava Rotti/sooji roti
Base batter:
Sajjige/Rava/Sooji - 1 cup
Water - 1/4 cup or just enough to make a thick batter with little less than pouring consistency.
Rice flour- one/two teaspoon(optional)
Salt
Hing- a pinch
Sugar- 1/4 teaspoon (optional).

Mix everything together and keep aside for 1/2 an hour, for better results keep the batter over night.


Other ingredients:
Rava batter.
Small onion sliced - 1
Ginger sliced -1 teaspoon
Grated coconut - 2 tablespoon
Jeera/ Cumin- a pinch (optional)
Green chilli sliced- 2
Ghee - 1 teaspoon
Coriander leaves
Curry leaves

Method:

1. Mix all this together. (check Salt)
2.Heat tawa and pour the batter into the center, this may be a little hard to come out of your spoon, so you another wet spoon/ladle and with its back mix this in the centre of tawa. The batter should be a paratha consistency.
( You can even make a dough consistency small balls, then rub your fingers with little oil or water and spread this into the tawa.)
3.Spread oil on top of the rotti
4.Now cook both sides until they are crispy.

Serve warm with a mint,coconut and date chutney. That is the best compo for this (Personal opinion)
