Pineapple ginger Punch Drink.

For Ginger Syrup.

1.Ginger - 1/2 cup crushed.
2.Sugar - 1/2 crushed.
3.Water - 4/3 cup

Method.

Bring water sugar and ginger to boil in medium heat. Stir well till
the sugar is dissolved.

Cook in low flame for another 10 minutes.

Once that syrup is cooled squeeze that ginger well using a spoon and
pour the syrup through a sieve.

Transfer this syrup to a small container and keep this in fridge for
at least two hours before making the pineapple drink. ( This syrup is
a best top up for lemonade, toast and vodka :) so you can use the
remaining portion of this syrup for your cocktail parties )

Pineapple Drink:

Pineapple chunk - 1 cup
Hot water - 1 1/2 cup
Cold water - as necessary
Honey - 2 tablespoon ( or sugar - 2 tablespoon)
Lemon or lime juice - 2 tablespoon
Mint - few (optional)
Ginger syrup - 2 tablespoon

Method

1.Cover the pineapple with hot water for half an hour, then
refrigerate this for further 5 hours.
2.Puree this in a blender and extract the juice using a strainer.
3. Combine the honey with 1/2 cup of very hot water and allow the
honey to be dissolved.
4. Add ginger syrup to this.
5.Combine this with pineapple juice and lemon juice.
6. Adjust the consistency by adding more cold water( if necessary)

Serve well chilled with mint as garnish.

P.S : Vodka, sparkling water and 1/2 glass of this juice makes a punch
drink. Enjoy your weekend.
